ABSTRACT
Quality of oil and meal products, and the effects of processing on these, is discussed in this chapter. This is a compilation of quality issues discussed in Chapters 12, 13, 14 and 15. Each unit operation affects eventual product quality, hence this compilation should help plant engineers to pay attention to precautions in plant operation to ensure top product quality. Quality issues of soybean lecithin and cottonseed meal are also discussed.
