The marketability of a product and the extent of post-harvest losses are both affected by variances in quality standards, consumer preferences, and purchasing power between countries and cultures. Among the most significant quality qualities for farmers are high yields, pleasing appearance, ease of harvest, and the ability of the crop to resist long-distance shipping to markets. Wholesale and retail marketers place a high value on product attributes like appearance, hardness, and shelf life. The composition and post-harvest quality of fruits and vegetables can be considerably influenced by the harvesting process. Fresh market fruits and vegetables can be assured of their quality and safety by following good sanitary methods and harvesting with care, even if the point of sale is just a few hours away from the harvest site. Refrigeration and packing are crucial for transporting fresh products over a long distance.
