ABSTRACT

Turkish cuisine has a rich history that goes back thousands of years. Its uniqueness, which is characterized by the simplicity of meat and bread cooking and the freshness of the ingredients, can be traced to the historical lifestyle of the Eurasian nomads. However, Turkish cuisine has also been influenced by many other food cultures during the long migration routes that began in Central Asia. Despite some eating habits that have continued with minor variations throughout history, primarily based on ingredient availability, the cuisine has been very dynamic in accommodating new vegetables, seafood, and a range of herbs and spices due to cross-cultural influences along the migration routes.
