ABSTRACT

Powdered dry milk protein products have a long shelf life and can be used in numerous food applications. Both bioactive peptides and hydrolysates from milk protein can play potentially important roles in different food items. Modified milk protein products are needed due to their functional properties in specific food products. Spray-dried sodium caseinate is water-soluble and is mostly used in food applications. Milk protein products are beneficial in different convenience food items. For example, sodium caseinate gives good emulsification and desired texture in dry cream products for sauces, in soups, nut substitutes, and imitation potato skin shells. Milk whey is the serum or liquid that remains once the fat and casein are removed for the production of cheese or acid and rennet casein. The industrial procedures used to isolate protein products from whey are summarized in many sources.
