Food scientists and nutritionists have provided much data on the wholesomeness and safety of our foods, but consumers want more information on both the nutrients and antinutrients that can affect our health. Advanced analytical techniques have permitted detection of even lower levels of toxins. The sweet potato grown in the tropics is used to make an alcoholic beverage, shochu. If the tissue of the underground roots is damaged by insect or mechanical attack, infection with a blackrot organism, Ceratostomellafimbriata, may occur. Para-coumaric acid was the major phenolic acid, accounting for 40-60% of the total phenolic acids in all peanut protein products. Phenolics from soy protein extracts have also been removed. Some animal growth inhibitors have been identified in a soybean fraction, which is currently discarded as a polluting waste product. Antinutrients and toxins sometimes occur in honey. Activated carbon has the potential of removing offensive substances and decolorizing.
