Sorbic acid is an antimicrobial preservative with good activity against yeasts and molds and less activity against bacteria. Acceptable in vitro activity was demonstrated against most bacteria, with the exception of Bacillus cereus. Potassium sorbate has less antimicrobial activity, but is more water soluble.
