ABSTRACT

Beverages industry is one of the major sectors of the food industry, and the growth in beverages industry was enormous in the 1980s and 1990s. A trend of decline in sale of beverages has been noticed in the last five years, especially the sale of carbonated soft drinks declined about 1%–2% annually over the last decade. The Beverages Marketing Industry (BMI), New York, predicted a 1.4% annual reduction in carbonated soft drinks volume between 2015 and 2020 (Beverage Industry 2017). The consumers’ demand for nutrient-rich beverages and organic products is the major reason for this declining trend. The decline in soft drink sales hugely impacts the beverages industry because soft drink sales make nearly 20% of the beverages market share throughout the world. Therefore, the beverages industry is spending billions of dollars in research and development of new healthy beverages with natural ingredients, naturally functionalized drinks, replacement of artificial ingredients and preservatives, and environment-friendly packaging in order to meet consumer’s expectations and demands (Evergreen Packaging 2017). Similar to other sectors of the food industry, the development in nanoscience and nanotechnology can help the beverages industry to achieve their goal of developing new products, processes, and packaging techniques. Nanotechnology can be applied in manufacturing processes, quality control, and safety assessment as well as packaging of beverages.
