9.1 INTRODUCTION

The global livestock sector has undergone huge growth in recent decades, motivated by the growing human population and by the increase in per capita animal product consumption across large swathes of the planet (Alexandratos and Bruinsma, 2012). This dynamic has been called into question on account of its contribution to serious socioenvironmental problems, such as climate change (Herrero et al., 2016), deforestation and the loss of biodiversity (Steinfeld et al., 2006; Thornton and Herrero, 2010; Erb et al., 2016), and competition between food for human consumption and the production of animal feed (Schader et al., 2015).
