ABSTRACT

The presence of anthocyanins in asparagus has no detrimental effect on storability of the canned product. Clitoria ternatea L. or butterfly pea is found throughout India, and its flowers are used for medical and food purposes. Consumers prefer uniformly colored eggplants with dark skin varying from dark purple to black. Fennel, Foeniculum vulgare Miller, is indigenous to Italy. A more detailed identification of the anthocyanins of globe artichoke was reported by P. G. Pifferi and A. Vaccari. Rhubarb contains anthocyanins in the epidermal layer of the stalk, particularly at the base, and in the roots. Sugarcane, Saccharum officinarum L., is a tall grass that grows in tropical and semitropical countries. Sunflower is one of the world's leading oilseed crops, second only to soybean in world oil production. Tamarillo, or tomato tree, is native to Peru and grows well throughout the subtropical regions. The peanut plant is unusual because its pods develop underground.
