ABSTRACT

Jams and jellies are products made principally from fruits, but they can also be made from some vegetable materials, such as sweet potatoes, tomatoes, carrots, and some legumes. The U.S. Code of Federal Regulations (CFR) provides definitions and standards for jams and jellies: 21 CFR 150.140 for fruit jelly, 21 CFR 150.141 for artificially sweetened jellies, 21 CFR 150.160 for jams, and 21 CFR 150.161 for artificially sweetened jams. This part also includes definitions and standards for fruit butter.
