ABSTRACT

Along with increased production and processing of berry crops, considerably higher ratios of by-products arise. By-products of berry processing represent a major disposal problem for the industry, which is further aggravated by legal restrictions. Meanwhile, berry processing by-products are promising sources of some compounds that may be used for production and recovery of value-added ingredients and other products, providing benefit to the industry. Extraction of anthocyanins, catechins, avonol glycosides, and phenolic acids from grape and other berry pomaces has been studied by many researchers.
