ABSTRACT

Tocopherols, commonly known as vitamin E, are known for antioxidative activity which has been widely applied in the fields of food, medicine, and cosmetics. Figure 4.1 illustrates the molecular structures of tocopherols. The main source of natural tocopherols is deodorizer distillate (DOD), a byproduct of the edible oil refining process that is rich in tocopherols and sterols [1].
