ABSTRACT
In this context, factors affecting the reaction equilibrium constant, the substrate selectivity of a lipase for various carboxylic acids, and continuous production of the esters will be described. Properties of acyl
ascorbates will also be mentioned. An immobilized lipase from Candida antarctica, Novozym® 435 or Chirazyme® L-2 C2, was used throughout this chapter.
