ABSTRACT

Osteoporosis is an important public health problem in the world. With an increasing population of the aged, the incidence of osteoporosis and bone fracture has been increasing. In bone tissue, bone formation and bone resorption are always occurring, and the integrity of the bone tissue is maintained. For bone health, it is important that the proper balance of bone formation and resorption be kept. While

this balance is maintained properly in the young, bone resorption in older individuals exceeds bone formation for various reasons such as menopause, among others. There is thus a need to develop food components that increase bone formation or suppress bone resorption for the improvement of the unbalanced bone metabolism that occurs later in life.
