ABSTRACT
Chitin is a naturally occurring polysaccharide and its production in biomass of up to 1012 tons/year makes it one of the most abundant polysaccharides on Earth [1]. Even though the discovery of chitin and chitosan dates back to the 19th century, it has been only in the last three decades that this material has attracted the attention of biomedical scientists.
