Structured triacylglycerols (STs) can be defined in several ways, but in this chapter the term will cover triacylglycerols (TAGs) that have been modified or restructured from natural oils, fats, and fatty acids. The STs are synthesized for nutritional use or specific purposes, such as human milk-fat substitutes, low-calorie fats, oils enriched in essential fatty acids (linoleic and

α

-linolenic acid) or long-chain n-3 polyunsaturated fatty acids (eicosapentaenoic [EPA] and docosahexaenoic acid [DHA]), and TAGs containing both long-chain polyunsaturated fatty acids and medium-chain fatty acids (MCFAs) for specific nutritional or medical applications.
