ABSTRACT

Food reactivities include the sum of diet-related acute allergy, hypersensitivity (delayed allergy), and intolerance.1-3 Celiac disease incorporates all aspects of food reactivity into a perfect storm of suffering too often overlooked in practice. Careful history and recently available predictive diagnostic tests are recommended to properly include or exclude food reactivities.1-4 This chapter reviews the link between the varieties of food reactions and their clinical relevance to inammatory, autoimmune, and degenerative conditions.1
