ABSTRACT
The roots of pulsed electric eld (PEF) processing can be traced to the work conducted in Germany. Doevenspeck (1960) described different PEF equipment and methods ranging from PEF processing of sausage to specic electronic embodiments. Doevenspeck remained active for many years and collaborated on PEF development with later German investigators (Barbosa-Cánovas and Zhang 2001).
