Monoacylglycerols (MAGs) are good emulsiers used widely in the food, cosmetics, and drug industries. MAGs with saturated and monoenoic fatty acids (FAs) are produced industrially by chemical alcoholysis of triacylglycerols (TAGs; oils and fats) with 2 mol glycerol at high temperatures of 210°C-240°C. But, the process cannot be applied to synthesis of MAGs with unstable FAs. Meanwhile, enzymatic processes efciently proceed under mild conditions and are effective for production of MAGs with FAs that are unstable and have nutraceutical activity.
