ABSTRACT
The word “coffee” is a general term that comprises roasted coffee (including decaffeinated coffee) and derived beverages, as well as a wide variety of convenience and semimanufactured products such as instant coffee and coffee concentrates. Thus, this term is synonymous with coffee products and encompasses many technological processes responsible for the great compositional complexity of the derived products.
