ABSTRACT

Dietary lipids are known to play an important role in animal nutrition (Wilson, Fisher, and Fuqua 1975; Pond, Church, and Pond 1995). They pro­ vide energy for growth, maintenance, and reproduction and are sources of essential fatty acids (EFAs) and phospholipids involved in the structure and function of cell membranes. In addition, dietary lipids are involved in the transport of fat-soluble nutrients, such as sterols and vitamins, and in the synthesis of hormones, prostaglandins, and other metabolically active com­ pounds.
