ABSTRACT

Pineapple is a major tropical fruit cultivated in hot and humid regions for the edible fruits. Fruits are eaten fresh after peeling the rind. It is also canned in pieces or processed for jams, juices, and squashes. Fruits are a rich source of vitamins A, B, and C and of minerals such as calcium, phosphorus, and iron. They are a good source of the protease enzyme bromelain, which is used in medicine and in the food-processing industry.
