ABSTRACT

What are they? Fibrous carbohydrates that are used as thickening additives. They have the properties of hydrocolloids.

Additional information: Chemically, they are a group of gums formed by galactose and

mannose (hence their name). The most important soluble fibers are carob, guar, and tara. See Carob gum, Guar gum, and Tara gum.
