ABSTRACT

What is it? A carbohydrate formed by three linked monosaccharides (glucose, fructose, and galactose).

It is present in plants, especially the sugar beet. Raffinose is also found in peas and beans. As it is a sugar that is

more complex than the disaccharides, it does not break down easily and enters the small intestine without having been absorbed. It is assimilated (fermented) by the intestinal flora in the large intestine, and these microorganisms liberate gases that can cause flatulence.
