6.1 Basic Concepts of Polymers During the past two decades, packaging polymers have become the material of choice for many food packaging applications which were once dominated by paper, metals, or glass. Polymers are a vast subject whose details require several books to fill, and hence this chapter is limited to an introduction of those basic concepts and applications most relevant to food packaging.
