ABSTRACT
For quantification and an exact qualification of the expected aldehydes with the G C N S system, 13 different aldehydes (Cs - CI2) which are known for their rancid smell [3] were submersed in olive oil and corn oil. The concentrations of the aldehydes were 100 ppm for aldehydes with higher vapour pressures (C5 - C6) and 1000 ppm for the ones with lower vapour pressures (Cs - C12). With these aldehydes in the oil matrices a six step MHE was carried out with the G C N S and the MOSES I1 system.
