ABSTRACT

Soba manju, steamed buns made from buckwheat flour, is a traditional and popular confection in some mountain areas in Japan. The dough, made from buckwheat flour, wheat flour, sugar, water, ammonium carbonate, and sodium bicarbonate, is divided and rounded into small balls, which are flattened. Sweet bean jam filling is placed in the center of the flattened dough piece and enclosed by sealing the edges of the dough piece. The finished dough pieces are placed on racks and steamed.
