ABSTRACT

Sweet potato jelly (as shown in Figure 5.11) is a variety of youkan (sweet bean jelly). Sliced sweet potato boiled with sugar (as shown in Figure 5.12) is loved by many as a kind of sweet in Japan. Recently, a confectionery shop has put a unique product on the market (see Figure 5.13), which is produced by the cooking and drying of the sliced skin of sweet potato. In the promotion, it is mentioned that the product contains a lot of dietary fiber and the essential nu­ trients of sweet potato.
