ABSTRACT

Red Delicious apples were purchased from a local supermarket. The apples were peeled, cored, and sliced with an Apple Parer Corer & Slicer (Model No. 300, White Mountain Freezer Inc., Winchendon, MA). Apple slices 1cm thick, were immediately immersed in an acidified sugar solution pH 3.0 at 30°C for 4 hours in a proportion of 3:1 (weight/weight). The process used for preparation of the apple slices is shown in Figure 15.1.
