ABSTRACT

The main factor affecting the stability of apple slices treated by combined methods is the presence of air when packaged. The quality of the slices decreased significantly compared to other packaging alternatives (gas flush, vacuum, and lightproof package). Meanwhile, there are no advantages in using lightproof pouches for packaging apple slices treated by combined methods technology. The most important hurdle during the packaging step is the re­ moval of air from the pouch to improve the shelf stability of the product.
