ABSTRACT

The contents of the water-soluble and total pentosans in wheat are 0.3-0.8% and 4-6%, respectively [2], while their corresponding levels in rye are ~0.7% and 7-8% [3]. The content of pentosan in barley ranges from 4-8%, of which up to 75% is found in the husk and is insoluble in water [4,5]. The total and watersoluble pentosans in oat are the lowest, ranging from 2.2-4.1% and ~0.2%, respectively [2]. These results are summarized in Table 4.1.
