AMINO ACIDS Amino acids are mostly small water-soluble organic molecules (molar mass: 75 to 200) that can be crystallised. They carry on their a carbon, amine-NH2 and acid-COOH groups, a hydrogen and an R radical, which is an organic group depending on the amino acid under consideration.
