ABSTRACT
Sugar beet and sugar cane provide most of the sugar (sucrose) produced in the world today. The history of the former spans about 200 years, during which time it benefited from continual progress in the fields of genetics, agronomy, and factory processing. Sugar beet was literally invented and constructed by man (Coons, 1936), making it unique in the history of agriculture.
