ABSTRACT

Whey is the by product o f cheese and casein m anufacture. T herefore, the prim ary emphasis is on production o f cheese and casein o f consistent quality attributes and attributes o f whey resulting from these processes vary considerably. T he only certainty with whey protein products is that their functionality will vary from batch to batch and m anufacturer to m anufacturer. T herefore, an understanding o f the types o f products and their m anufacture may help in rationalizing the observed variabilit­ ies in functionalities o f whey products. Typical compositions o f wheys are given (Table 11.1).
