ABSTRACT

The Pillsbury Company, working cooperatively with NASA and the United States Army's Natick Laboratories (Massachusetts), is credited with the actual development of HACCP. Realizing the impracticalities associated with the traditional system of problem detection, Pillsbury turned the focus from detection to prevention (Bauman, 1987). This seemingly small change in focus altered the philosophical direction of food safety control by 180 degrees. It also created the need for an imaginative, yet practical, approach to implementing a prevention-based food safety control program. As the following discussion will indicate, there are several key elements associated with implementation of a HACCP system.
