Introduction

In this chapter we shall recall the concept of surface or interfacial tension, the Navier-Stokes, Fourier, and Fick hydrodynamic equations, and we shall discuss various heat and mass transfer phenomena occuring at an interface, deformable or not. The Marangoni effect is also discussed.
