ABSTRACT

Peyron (2002) gives a detailed description of the systems used for the production of neroli oil, bitter orange ower water absolute, and bitter orange ower absolute. This chapter describes the composition of the following products obtained from bitter orange owers and their possible adulterations:

Neroli oil obtained by steam distillation or by hydrodistillation from the owers• Bitter orange ower water absolute obtained from bitter orange ower by solvent extraction • of the water phase produced by distillation Bitter orange ower absolute obtained by extraction in alcohol from the solvent extract of • the owers
