ABSTRACT

A recent assessment comparing the American diet for the periods 1994-1996 and 2001-2005, as measured by the healthy eating index-2005, suggests that the quality of the diet is in urgent need of improvement (USDA 2007). Not only should Americans consume more fruits, vegetables, and whole grains and reduce the level of fat in their diet, but they also need to choose more nutrient-dense foods that are low in saturated fats and added sugars.
