As might be expected, both –brous and unstructured proteins di˜er from globular proteins not only in shape and biological roles, but also in other properties, such as water solubility, atomic packing and density, hydrophobicity, dynamics, and folding energetics. In this chapter we will review what is currently known about non-globular proteins, emphasizing the above aspects, as well as the structure-function relationships exhibited by these proteins.
