ABSTRACT

The following chapters will describe the steps that you can take to develop your own food allergy program. These chapters will cover building a communication process, service and kitchen management training tips, and menu and recipe creation with appropriate ingredient substitutions and packaged products that will help you create your own menu offerings. Before I go on, I want to say one thing: If you are not 100% sure you want to start a food allergy program, don’t! You and your staff have to take all food allergy requests seriously and understand what your responsibilities are in order for the program to be successful. There is no maybe, sort of, or I think we can do this. Guests with food allergies will be putting their trust in you and your team that they will be eating a safe meal. So you have to get it right every time.
