ABSTRACT

Auguste Escoffier, “The Chef of Kings and The King of Chefs,” was the father of today’s modern cuisine and way ahead of his time. His greatest accomplishment was to simplify the overextravagant meals of his predecessors. One of his famous sayings was “Above all, keep it simple.” This is my philosophy when it comes to cooking for people with food allergies. My motto is “Keep the food simple to keep the guest safe.”
