ABSTRACT

Have you ever seen a breakfast menu without eggs, a lunch menu with a breadless sandwich, a dinner menu without pasta in a cream sauce, or a dessert menu without chocolate cake? I haven’t and you probably haven’t either. This is because these ingredients are staples of the American kitchen and key ingredients in the American diet. It would be ludicrous for a chef to even consider not having eggs, milk, cheese, bread, or fish on the menu because this is what the majority of restaurant guests expect to see on the menu.
