ABSTRACT
Most operations of separation, conservation, and processing of agricultural products use air or water as a transportation medium of mass (impurity and water) and/ or energy. Therefore, we need to know how the ™ow passes through the product, in addition to the transfer phenomena and thermodynamics of the ™uid and the product, in order to correct handling and simulation of these operations.
