ABSTRACT

It is ultimately in the understanding of biological life, its physiology, the various organic compounds, the genetics and the chemical reactions among much else that paved the way for the full realisation of the body’s needs and processes. However, progress was stubbornly slow owing to ancient beliefs about all things life, health and spiritual. I say ancient but in reality although such beliefs emerged from ancient civilisations it took till the sixteenth and seventeenth centuries and the persistence of science and scientists for these ideas to be properly challenged. Furthermore, science at this time also opened up new areas of disciplines and found new and innovative ways of addressing many of the challenges of the day that ultimately improved many aspects of agriculture, food processing, safety and by extension good health. With these ideas in mind, this chapter explores some of these persistent beliefs and explores just how science smoothed the transition of the food security technologies.
