ABSTRACT
As highlighted in previous chapters, once an appropriate critical indicator for shelf life has been identied, it is necessary to estimate the evolution of this indicator over time. This step, generally dened as shelf life testing, implies the continuous monitoring of the changes of the critical indicator during storage of food under controlled environmental conditions.
