ABSTRACT

Food production has become a major concern of humanity today in the context of population increase, urbanization, and climate change, and may have a deep impact in the future. In fact, much of our food is derived from agriculture, horticulture, and fisheries that have become increasingly market driven worldwide today. Further, developing economies have great potential with their vast natural resources, especially food crops, vegetables, and fruits for export through food processing considered the key area for earning foreign exchange. ¢erefore, food industries, both large and small, are multiplying rapidly in many countries as a consequence of globalization of markets and the lifting of trade barriers. ¢us, food and beverage industries have earned the status of “major industries” and contribute significantly to the large-scale manufacture of a vast range of food and beverage products toward catering to the needs of people across the globe.
