ABSTRACT

Food structures must eventually break back down into molecules because these are the units that are needed by our body. Their collapse begins in the mouth, where molecules are released and interact with receptors in the brain, thus unleashing a cascade of sensations. The destruction continues in the digestive system, an essential but relatively complex and unknown reactor that prepares the molecules to enter our body. This closes the food cycle: all starts as molecules created by nature and will be converted back into molecules again (inside our bodies). After completing this chapter you will have one secret: Eat less and enjoy the food more.
