ABSTRACT

Molecules move and constantly collide, and are a source of energy that we can capture as heat. The laws of thermodynamics that describe this phenomenon can be applied in food and cooking as well as explain why we gain weight. Heat is crucial in the food industry and is sometimes referred to as the main “ingredient” in the kitchen. But thermodynamics also deals with two intriguing concepts in our lives: equilibrium and entropy.
