ABSTRACT

Pickling is a technique that is used to preserve all kinds of foods, including vegetables, meat, fish, eggs, fruit and even nuts. In addition to prolonging the shelf life of the food, pickling adds flavor and can transform a fresh food into an entirely new product (such as cucumbers into gherkins). Some other examples include vegetables in a sauce, vegetables preserved in olive oil, or fruits preserved in alcohol. It’s important to remember that pickled foods are only as good as the ingredients with which they are made.
