ABSTRACT

Most of the guidelines contained in this chapter are taken from the American Public Health Association (APHA), as described in the Chapter 8 of the 4th Edition of the Compendium of Methods for the Microbiological Examination of Foods (Kornacki and Johnson, 2001). When different from or complementary to those of the Compendium, they were completed with information and recommendations from the 17th Edition of Standard Methods for the Examination of Dairy Products (Wehr and Frank, 2004), specific to the microbiological examination of dairy products.
